Allresto Munich Airport takes off with sell & pick

Data-based decisions for gastronomy at Munich Airport

Andreas Reichert and Andreas Steinbeisser

Around 50 restaurants, cafés and bars at Munich Airport - each with its own character, from upscale fine dining to quick travel snacks. A wide variety of guests meet here every day: the business traveler in a hurry who needs a quick coffee or the family who wants to eat in peace before a long flight. How do you keep an overview? How do you manage to satisfy guests, make optimum use of staff and goods and at the same time secure sales and profits?

With the introduction of sell & pick, Allresto is laying the foundations for a new era: step by step, operational processes in sales, personnel and goods management are being digitalized and optimized. So far, the focus has been on harmonizing and processing POS data from different systems - and clear successes are already evident, paving the way for future-oriented restaurant management.

From complex system landscapes to clear insights

Since 1978, Allresto has been operating 85% of the catering services at Munich Airport with currently around 50 outlets and around 900 employees.

The challenge

Numerous data such as turnover, personnel and sales from various sources distributed across many cost centers. The complexity of the system landscape made it almost impossible to analyze this flood of data. In order to be able to make data-based decisions for operations, management should be able to view and compare turnover and sales figures as well as passenger frequencies, for example.

The answer

Our software solution enables Allresto to centrally record and evaluate complex data from various sources and to address action measures to the relevant people at the right moment.

"Until now, our data landscape was very fragmented. With sell & pick, we now have a central platform that will give us a comprehensive overview of all relevant key figures and enable us to actively and quickly manage our operations."
- Andreas Reichert | Managing Director of Allresto

Increase sales, boost efficiency, inspire guests

Julia Amuschell, Project Manager at Allresto, reports that the software is a clear enrichment for all areas at Allresto. Andreas Reichert was able to present the development of the breakfast offer directly via sell & pick in a meeting - without any time-consuming queries.

"The implementation of the sell & pick platform has taken our internal management and processes to the next level - more efficient, more data-based and even closer to the customer." - Andreas Reichert | Managing Director of Allresto

Initial added value through the introduction of sell & pick

  • Time savings and efficiency: work that used to take a lot of time and coordination is now completed in just a few minutes. Complex and error-prone Excel-based evaluations are a thing of the past.
  • Increased transparency and comparability: All relevant data is centrally available to department and plant managers. The exchange of best practices and benchmarking is encouraged - each unit can compare its performance directly with others and identify opportunities for improvement.
  • Optimized shift and duty planning: Thanks to the central process platform, Allresto can plan and manage staff deployment more efficiently and adapt it to sales figures in a targeted manner. The result: the right employees in the right place at the right time.
  • More precise goods orders: With sales data at a glance, goods can be ordered exactly as required - reducing excess stock and food waste. Seasonal products can also be offered in a targeted manner.
Catering at Munich Airport is a dynamic and demanding environment. We are delighted that Allresto has found a solution with us that is tailored to its system and process landscape in order to reduce complexity and optimize operations.
- Andreas Steinbeißer | Founder and CEO of sell & pick

Long-term planning and future-oriented outlook

The next step: integrating personnel data to optimize planning and evaluation in another area. Allresto is also planning to use AI to automate recurring tasks and optimize planning processes. In the future, sell & pick will not only help with day-to-day business, but will also be used for holistic annual planning with intelligent software support. The catering industry at Munich Airport is a colorful and dynamic environment in which annual planning plays a major role. With sell & pick, Allresto wants to cover all levels from product planning and budgeting to overall strategic planning in the future.
