Making decisions in real time
From daily sales reporting by e-mail to responsive corporate management
The successful brand restaurant L'Osteria has always worked with key figures to manage its Italian specialties. Before using the analysis software from sell & pick, the creation of reports and the comparison and benchmarking of branches was very time-consuming. The information was often only available to the management and controlling department. Since the introduction of sell & pick's intelligent tool, the company's response time has been reduced by three to four weeks.
Every employee - whether restaurant manager, franchisee or employee from the head office or management - has the opportunity to retrieve the required data quickly, easily and clearly. By analyzing the data, insights for optimizing business performance can be derived almost in real time. This makes it possible to initiate countermeasures to changing key figures at an early stage.
The customer
It's Tuesday evening at the Künstlerhaus in Munich. On a pleasant 25 degree evening, guests are enjoying the Mediterranean flair with a glass of wine and a delicious pizza that goes far beyond the edge of the plate. This is L'Osteria. The successful Italian concept with its giant pizzas now has a branch network of 150 locations in eight European countries.
At the L'Osteria headquarters in Munich, Stefan Pranter deals with the key corporate figures of "La Famiglia" on a daily basis. His responsibilities include Group planning and management as well as the ongoing provision of reports for the management team.
The challenge
L'Osteria has always been data-driven and takes various key figures into account in its decision-making. In the course of this, Stefan consults many different systems and summarizes a wide variety of data from all restaurants in one view. Normally, this process took a long time, meaning that the evaluations produced were often out of date as soon as they were published (sometimes with a delay of up to two weeks). The consequence: a delay in the management's ability to react. Special evaluations were difficult or almost impossible to realize. In addition, a lot of information was usually reserved for management or the controlling department.
In addition, L'Osteria's management supports all restaurant managers with a daily sales overview, from which they can analyze their past sales figures for the current month in comparison to other stores in order to get a better assessment of their performance. Stefan's team spent more than an hour and a half every day on this form of analysis alone.
The solution
The controlling department had been looking for a system-independent solution for data-driven corporate management for some time. It was particularly important that this solution should respond to their individual needs and integrate perfectly with already established processes and software tools.
sell & pick was able to impress "La Famiglia" with precisely these attributes.
"Another decisive factor was that sell & pick already has extensive experience in the hospitality industry, understands the business and knows how to integrate a POS system and the many other programs into the cloud. I was particularly impressed by the data quality and data availability."

The result
L'Osteria uses various POS systems, personnel systems and other data sources. sell & pick harmonizes the data across all data sources and automates the evaluation of all data. The fully automated provision of daily reports and key figures from all software systems has reduced the management's response time by several weeks. This was a major advantage, particularly during the coronavirus pandemic, when the focus was even more on fast response times and cost-efficient action.
The democratization of data availability has the effect that everyone is now equally aware of their performance - from the controller to the restaurant manager. This means that employees can make data-based decisions at any time and take appropriate action. In principle, each branch now has its own small controlling department, which frees up management time for the important things instead of manually sending out sales figure reports by PDF every day.
